Legendary Cooking Recipes

Legendary Northwoods Complete Breading Mix provides more versatility than any other breading. The milk, the eggs and the spices are already in the mix. You really can bread anything you can moisten. Your family will enjoy all of your favorite foods - with a new twist.
Go ahead; enjoy the taste of Legendary Northwoods Breading. It has NO fat, NO cholesterol and only 6 grams of carbohydrates! And, it's economical as well. Our one-pound bag provides you with enough breading to cook four 14lb. turkeys or approximately six to eight pounds of other food items.

To Prepare Smaller Food Items with Legendary Northwoods Breading:

  1. Moisten food with water.
  2. Place moistened food in a plastic bag containing Legendary Northwoods Breading. Seal bag. Shake bag until food is evenly covered with Breading.
  3. Shake off excess breading and remove food product from bag. Let stand for 30 seconds and cook according to the recipe.

To Prepare Larger Fillets and Bigger Food Items with Legendary Northwoods Breading:

  1. Rinse or moisten food with water.
  2. Place moistened food on a plate containing Legendary Northwoods Breading. Press food firmly into breading. Roll food over and press again until food is evenly covered with breading.
  3. Shake off excess breading. Let stand for 30 seconds and cook according to the recipe.

Deep-Fried Specialties

Remember to preheat the oil before cooking to avoid soggy food. Always use tongs and caution around hot oil. Carefully lower food into oil. Never put large frozen food items into deep fryers. Remove food when it floats; that's how you know it's done.

Beer-Breaded Fish:
Instead of that heavy beer batter for your fish, use this recipe. Placed rinsed fish fillets in a zipper-sealed plastic bag. Pour in the beer and let the fillets sit for about 20 minutes. Remove fillets and put them in a fresh bag with some Legendary Northwoods Breading. Gently remove and let them absorb the seasonings for about 30 seconds. Now you're ready to cook beer-battered fish! All the great flavor, with a thin, crispy coating.

Deep Fried Chicken:
Everyone's favorite. Cut chicken into desired pieces, halves, quarters, eighths. Prepare with Legendary Northwoods Breading as directed above. Deep fry until pieces float.

Extra-Crispy Deep Fried Chicken:
Try this method if you enjoy extra-crispy deep fried chicken. Prepare pieces with Legendary Northwoods Breading as directed above. In a bowl, combine 1/2 cup milk with one egg. Beat until well mixed. Place the already-breaded chicken pieces in this milk/egg mixture. Remove and drain excess. Bread the chicken again in Legendary Northwoods Breading, and shake off the excess. Now, deep fry in hot oil until pieces float.
Deep Fried Shrimp:
Buy the size shrimp or prawns you prefer. You may remove the shell completely, or for a fancier look, leave the last section and the tail on the shrimp. De-vein the shrimp, if necessary, by making a small cut along the top of the shrimp. Remove that dark strip or vein. If you wish to butterfly the shrimp, simply make the cut deeper, cutting almost all the way through. Fan out the shrimp and prepare with Legendary Northwoods Breading as directed above. Deep fry in hot oil. Oh, what a treat!

Breaded Deep Fried Pickles
Just use regular hamburger dill chips. Just take them right from the jar, rinse them to remove excess salt, and put them right into the Legendary Northwoods Breading of your choice. Let stand about 20-30 seconds and put them into a deep fryer or small kettle of hot oil. Fry until done, about 1 min or until they float.

Vegetables
Legendary Northwoods Panfish Lite Breading has a great delicate flavor when deep-frying of pan-frying vegetables. Try it on mushrooms, cauliflower, zucchini, eggplant, green tomatoes, pickles, hot or sweet peppers, even crinkle-cut/waffle-cut/shoestring potatoes. Also try Original or Mild Cajun.

Pan-Fried Specialties

Chicken:
Prepare chicken with Legendary Northwoods Breading as directed above. Place approximately 1" of oil in your skillet. Heat the oil before placing chicken in the pan. To keep the chicken moist, sear each side. When nicely browned, lower the heat, turn the pieces occasionally, and continue cooking for approximately 20-30 minutes, depending on the size of the pieces.

Potato Pancakes:
Shred 6 medium potatoes and drain well. Mix shredded, drained potatoes with 1/3 cup Legendary Northwoods Panfish Breading. Form into patties. Pan-fry in a small amount of hot oil. Drain on paper towel. Serve with maple syrup, applesauce or sour cream.

Pork Chops:
Prepare pork chops with Legendary Northwoods Breading as directed above. Place a small amount of oil in your frying pan. Heat oil to sear the pork chops on each side. Remember to keep your oil hot. This keeps food crisp, not soggy!
Venison or pork tenderloins.
Cut loin into chunks about 2 inches thick. Using a spiked tenderizing hammer begin to pound your loin chunks into a thin cutlet (pound both sides until the size of a hamburger patty). Now bread your cutlet in either the Legendary Northwoods original or for a kicked up version the Cajun breading. Let stand for about 30 seconds. Get a medium sauce pan. Put in about 1/2 inch cooking oil [your choice] place on high heat until oil is ready. To check if oil is hot enough drop a pinch of breading in the oil if it fumes or bubbles it is ready. Carefully place cutlets in oil use tongs or fork fry for 45 to 60 seconds per side, depending on the cutlet's thickness. Before serving, cut cutlet to make sure that the meat is fully cooked.

Oven Specialties

Baked Fish, Salmon, Chicken, Pork Chops, Wild Fowl:
Preheat oven to 350°F. Spray a rack with non-stick cooking spray. Place rack in a metal drip pan (jelly roll pan or sided cookie sheets work fine). Prepare food product with Legendary Northwoods Breading as directed above. Place on the rack and put in the oven. Cooking times vary based on type of food item and thickness of pieces.

Baked Potato Wedges:
Preheat oven to 350°F. Cut potatoes into quarters. Prepare with Legendary Northwoods Breading as directed above. Be sure to press raw edges of the potato into the breading for good coating. Spray cookie sheet or other flat pan with non-stick cooking spray. Place prepared potatoes on pan, skin side down. Bake approximately 45 minutes, or until tender.

Meatball Hors d'oeuvres:
Make your favorite meatballs, but before you bake them, roll them in Legendary Northwoods Breading. You'll have a flavorful coating that seals in the juices. A great treat for your guests.
Beef, Pork or Venison Roasts:
Pour Legendary Northwoods Breading onto a plate or platter. Roll moistened roast in the breading. Wait 30 seconds. Spray a large skillet with non-stick cooking spray, or coat with a small amount of oil. Preheat skillet on high to sear the meat. This will preserve the flavorful juices. Turn roast frequently until all sides are nicely browned. Remove to a roasting pan and bake at 350°F until tender. Try our easy, flavorful Gravy recipe below.

Meatloaf:
Here's a great tip! Make meatloaf the way you like it, but instead of using eggs, and bread, cracker crumbs, etc., substitute 2 tablespoons of Legendary Northwoods Breading per pound of ground meat. Bake as usual. Delicious!

French Fries:
Preheat oven to 350°F. Moisten fresh cut or frozen french fries with water. Prepare fries with Legendary Northwoods Breading as directed above. Spray cookie sheet or other flat pan with non-stick cooking spray. Place prepared fries on pan. Bake until golden and tender, approximately 20-30 minutes. Turn once during baking. Amazing seasoned fries!

Grilled and Broiled Specialties

Grilled Fish, Salmon, Chicken or Wild Fowl:
Spray the grill rack with non-stick spray. Prepare food with Legendary Northwoods Breading as directed above. Place items on preheated grill rack. Cook until done.

Oven-broiled Pork Chops:
Enjoy pork chops and control the fat in your diet too! Spray grill rack with non-stick cooking spray and set in a shallow pan (jelly roll pan or sided cookie sheet works). Prepare pork chops with Legendary Northwoods Breading as directed above. Place items on rack and set in the oven to broil. Cook about 7-10 minutes per side. This recipe also works great with venison chops. Tender, juicy and full of flavor!

Grilled, Zesty Shish-kabobs:
Put out a variety of mushrooms, onions, new potatoes, tomatoes, pineapple chunks, apples or pears. Cut your favorite meat, beef, chicken, wild game, shrimp, scallops, or chunks of fish into small-sized pieces. Prepare food with Legendary Northwoods Breading as directed above. Sear the meat and seafood quickly in a hot skillet for just a minute. Now, let the fun begin! Give out the skewers, and let everyone build their own special shish kabobs. Place the kabobs on the grill (works in the oven as well at 325°F) and cook until tender. Delicious!
Indoor Grilling for Contact Grills:

Cajun Boneless Skinless Chicken Breast
Rinse chicken breast in water, place chicken breast in a gallon size zip lock bag. Now add some Legendary Northwoods Cajun Breading one table spoon at a time until you have enough to cover the amount of chicken you wish to make. Remove from breading and shake off excess breading. Let stand 30 seconds. Spray breaded chicken breast with cooking spray. Place breast on grill. Cook to manufacturer's recommended time. What a fantastic flavor and what a surprise; healthy food actually tastes good!

Miscellaneous

Gravy:
Mix several tablespoons of Legendary Northwoods Breading with your pan drippings. Stir mixture continuously over low heat until smooth and thickened. If gravy is too thin, slowly add additional Legendary Northwoods Breading, a tablespoon at a time, while continuing to stir. If your gravy is too thick, add more drippings or water until you achieve desired consistency.
Family Favorite Soup:
Legendary Northwoods Breading is a great soup starter. The wonderful spices and seasonings add great flavor to your soups. It's a great thickener for your creamed soups. Try it for Cream of Chicken soup or Cream of Mushroom soup.

Dumplings for Soup:
When making dumplings for your soup, add a few tablespoons of Legendary Northwoods Breading to the flour mixture. Out of this world!

Dessert Treats

Caramel Apple Crisp:
Use tart apples to make this recipe. Core the apple and cut into thin slices, about 1/8 inch thick. Rinse apple sections in water, then bread in Legendary Northwoods Original Breading. Let stand 30 seconds. Put 1/4 inch of oil in the bottom of a small frying pan. Turn on high heat. Quickly brown both sides of the apples but don't cook them through. Remove the apples from the oil and drain on a paper towel. Place on serving plate, drizzle caramel sauce over the cooked slices, and add ground peanuts over the top. A treat the whole family will love!
Fried Bananas
Take a just ripe banana (not an overripe one the kind with a lot of brown spots, they tend to turn mushy) and cut it into about 1/4 to 1/2 inch slices place banana directly into Legendary Northwoods breading. Let stand about 30 seconds. Place in hot oil that's deep enough to be able to flip the slices one time, or use a deep fryer. The bananas cook just like a donut - they will grow to twice their thickness and get really creamy inside. Flip the bananas once and the breading will be golden brown like a little pie crust. When golden brown on both sides, remove bananas from oil and drain on paper towel. For a real treat, place bananas on some vanilla ice cream and drizzle chocolate sauce over the top.
